How Much Ice Does a Bar Use per Guest and per Day?

There is no universal number for how much ice a bar uses per guest or per day. A cocktail bar with Tiki drinks, highballs and many shaken cocktails uses far more than a wine bar, and two guests can order very differently.
The best method is therefore to calculate demand from your own menu and actual guest behaviour.
How to calculate ice per guest
A simple model is:
average ice-served drinks per guest × average serving ice per ice drink + other ice per guest + buffer
“Other ice” can include shaking, stirring, water service, soft drinks and prep.
Illustrative example per guest
Assume a guest orders an average of 2 drinks served with ice and your own measurements show 150 g of serving ice per drink.
2 × 150 g = 300 g of serving ice per guest.
That is only serving ice. Shaker ice, water, waste, melting and a safety buffer must be added. This is not an industry benchmark; it only demonstrates the calculation.
How much ice is in a glass?
It varies widely with glass and ice format. A highball packed with standard cubes can in some setups easily contain around 120–180 g, while a lowball with one large cube may be different. Weigh your own standard serves.
How to calculate daily ice use
At daily level:
number of drinks × average serving ice + shaking/stirring ice + other use + buffer
Or, if guest behaviour is stable:
number of guests × calculated ice per guest.
Example: 200 drinks
If 200 drinks use an average of 150 g of serving ice:
200 × 0.15 kg = 30 kg of serving ice.
If shaking, waste, melting, water/soft drinks and prep add another 10–20 kg in an illustrative scenario and a buffer is then added, total practical demand might for example land around 45–60 kg. This is still not a universal standard.
Shaken cocktails increase consumption
A shaken cocktail can use ice twice: first in the shaker and then fresh ice in the serving glass. If shaker ice is discarded after every drink, it can represent a major share of total use.
Crushed ice, nugget ice and Tiki
Drinks using small or crushed ice can pack large glasses very densely. If Tiki, Julep or frozen drinks are a large part of sales, calculate them as a separate group.

Peak demand matters more than a neat 24-hour figure
An ice machine can theoretically make enough in 24 hours and still be too small. If the bin is empty during the evening peak, later overnight production does not help. Calculate both daily production and required storage before peak.
Get your own number quickly
- Select the 10–20 best-selling drinks.
- Weigh serving ice in each.
- Record shaker/mixing ice per recipe.
- Include water and soft-drink ice.
- Multiply by actual or forecast sales.
- Optionally divide by guests for an internal grams/kg-per-guest metric.
- Add a realistic safety buffer.
Use the metric for events and purchasing
Once a bar knows its own ice use per guest, reservations and events can be planned far more accurately than with a generic industry figure.
Choose an ice machine for the real load
Do not size only by guest count. Consider drink mix, daily output, bin capacity, peak demand, water quality and the ice format the menu requires.
