Which Ice Machine Should a Bar Choose?

An ice machine for a bar should be sized for the busiest service, not an average day. Too little capacity means running out of ice on Friday night; an oversized machine can waste space, capital and operating cost.

Start with kg of ice per 24 hours

Manufacturers normally quote nominal production per 24 hours. Real output can vary with water temperature, room temperature, ventilation and machine condition. Do not size the machine right on the limit.

Undercounter or modular?

Undercounter

A compact machine with integrated storage bin. Good for smaller bars or as a secondary machine near the station.

Modular

A larger production unit mounted over a separate bin. Relevant for high volume, multiple stations or major event/restaurant demand.

Choose the right ice type

  • Standard cubes: versatile for highballs, soft drinks and shaking.
  • Large cubes: premium lowball serves, often produced separately.
  • Nugget/pebble ice: Tiki, juleps and some soft drinks.

The storage bin matters just as much

An ice machine is food equipment. Build cleaning, descaling, filter service and bin inspection into routine operations.
