Crushed ice is more than simply small pieces of ice. A densely packed glass of crushed ice delivers rapid chilling, ongoing dilution and a distinctive texture. That is why it is closely associated with Tiki drinks, Juleps, Swizzles and tropical cocktails.

What is crushed ice?

Regular ice cubes are broken into small irregular pieces. They pack closely around the drink, creating high surface area and a frosty presentation.

Which cocktails use crushed ice?

Mint Julep, Mai Tai, Zombie, Swizzles and Bramble are obvious examples. Mojito and Caipirinha are also sometimes served with crushed ice depending on house style.

Mint Julep

The Julep is a textbook crushed-ice drink. Bourbon, sugar and mint are served with a large amount of ice, and gradual dilution is part of the experience. Finish by mounding fresh ice above the rim.

Tiki drinks

Tiki recipes often combine several spirits, citrus, syrups and fruit. Crushed ice keeps the complex drink cold through a longer serve and creates the classic frosted look.

Mojito – crushed or cubes?

Both can work. Standard cubes create a cleaner highball style, while crushed ice gives a denser and more frosted serve. Avoid pulverising the mint and lime unnecessarily.

Bramble

In a Bramble, liqueur is commonly poured over crushed ice so it filters through the drink and creates an attractive colour gradient.

Without a machine

Place solid cubes in a heavy cloth bag or clean towel and crush them in controlled batches. Stop before you turn the ice into fine snow.

Can you use a blender?

Yes, if the blender is designed to crush ice. Use short pulses and stop before the result becomes slush.

Avoid wet crushed ice

Because of its high surface area, crushed ice starts melting quickly. Make it close to service and avoid adding excess meltwater. A draining ice scoop can help.

How much crushed ice?

Usually more than you think. Fill the glass and top with fresh ice at the end. A small handful in the bottom does not deliver the characteristic temperature or visual effect.

Crushed ice vs large cubes

They serve almost opposite purposes. Large cubes slow the development of short chilled drinks. Crushed ice creates rapid chilling, texture and continuing dilution.
