How to Prevent Bad-Tasting Ice Cubes

Ice is an ingredient. If ice cubes taste bad, that flavour goes straight into the cocktail, soft drink or water. The problem can come from the water itself, freezer, ice machine, storage or tools.

1. Taste the water first

Freezing does not necessarily remove flavour. If tap water noticeably tastes of chlorine, minerals or something else, it may also show in the ice. Use good-quality drinking water and consider appropriate filtration when local conditions require it.

2. The freezer can transfer odours

Ice can absorb aromas from strongly smelling food and a dirty freezer. Store ice in clean, closed containers or bags and keep the freezer clean.

3. Clean the ice tray

Silicone and plastic moulds should be cleaned properly after use. Old residue or odour can affect the next batch. See, for example, the silicone ice cube tray and follow the manufacturer’s cleaning instructions.

4. Ice gets old

Ice stored unprotected for a long time can pick up freezer odours and lose surface quality. Make smaller batches and rotate stock, especially for premium cocktails.

5. Ice machine and bin

In professional operations, biofilm, scale, dirt or standing water can affect both hygiene and flavour. Follow the manufacturer’s cleaning and descaling programme together with your own food-safety procedures.

6. Use clean tools

A dirty scoop, hands or a drinking glass used as a scoop can contaminate ice. Use a dedicated, clean draining ice scoop or another suitable scoop and store it correctly between uses.

7. Keep ice out of meltwater

Ice sitting in old meltwater quickly loses quality. Use containers and workflows where drainage and temperature function as intended by the equipment design.

8. Replace filters on time

If the ice machine has a water filter, service it according to manufacturer intervals and local water conditions. An old filter is not automatically better than no filter.
