Clear Ice – How to Make Large Transparent Ice Cubes

Clear ice gives cocktails such as an Old Fashioned and whisky on the rocks a clean, professional look. Truly transparent ice takes more than a large ice tray: the most reliable method is controlling the direction from which the water freezes.
Why do normal ice cubes turn cloudy?
When water freezes from several sides at once, air bubbles, minerals and dissolved material are often trapped in the centre. This creates the white or cloudy area seen in many ordinary cubes.
Directional freezing – the principle
Directional freezing means the ice freezes mainly from one direction. Clear ice forms first while air and impurities are pushed toward the section that freezes last.
How to do it with a small insulated container
- Fill a clean, food-safe insulated container with water.
- Place it in the freezer with the top open so the cold works mainly from above.
- Freeze until most of the block is solid, but before the entire cloudy bottom freezes through.
- Remove the block and let the surface temper briefly so it is less brittle.
- Cut or split the clear section into suitable cubes using safe, appropriate tools.
Work carefully with large ice blocks and sharp tools. If you do not want to cut blocks, an XL ice cube tray can still make attractive large cubes, although they may not become fully transparent.
Should you boil the water first?
Boiling can change the amount of dissolved gas, but boiled water does not guarantee clear ice. Freezing direction and the freezing process matter much more.
Filtered water
If your water has a noticeable taste, smell or high mineral content, filtration can improve both flavour and appearance. Clarity is not the same as good taste; the source water still needs to be fresh and suitable for drinking.
How large should the cubes be?
For Old Fashioned and whisky, cubes around 4–5 cm are popular when the glass has enough room. The larger the ice, the more important it is to match it to the glass. Read our large vs small ice cube guide.
Storing clear ice
Store finished cubes sealed and protected from freezer odours. Let them temper very briefly before service; extremely cold, dry ice can otherwise develop small surface cracks when liquid hits it.

Does clear ice melt more slowly?
Clarity alone does not determine melting speed. Size, shape, temperature and surface area matter more.
Can you make clear ice in a normal silicone tray?
You can make attractive large cubes, but fully transparent ice is harder without controlled freezing direction.
