Milkshake Guide – How to Get the Perfect Consistency

The perfect milkshake should be thick and creamy but still easy to drink through a straw. The ratio of ice cream, milk, flavouring and blend time controls the result.

A simple base formula

Start with around 2–3 scoops of vanilla ice cream and 100–150 ml cold milk per large serve. Begin with less milk and add more gradually until the texture is right.

Milkshake vs frappé

A classic milkshake is based on ice cream and milk, while café frappé more often uses ice cubes and a frappé base. Milkshake is therefore usually richer and more dessert-like. Read our frappé guide.

Why is my milkshake too thin?

  • Too much milk.
  • Too little ice cream.
  • Ingredients too warm.
  • Over-blending.
  • Too much liquid syrup or purée.

Why is it too thick?

If the blender struggles or the shake will not pass through a wide straw, it usually needs a little more liquid. Add milk gradually.

Vanilla, chocolate and caramel
