How to Organise an Efficient Bar Station

An efficient bar station reduces unnecessary movement and makes the correct next action easy. A bartender should be able to measure, build, shake or stir, strain, garnish and hand off the drink without constantly searching for tools or crossing colleagues.
The best station is not the fullest one. It is the one where the highest-frequency items are in the right places.
Design the station around the menu
Start with the 10–20 drinks that actually sell most. Note the bottles, tools, glassware, ice types and garnishes they require. Placement should optimise repeated movements, not rare specialist orders.
Work in zones
- Bottle zone: most-used spirits and modifiers.
- Measure/build zone: jigger, shaker/mixing glass and work surface.
- Ice zone: ice well, scoop and relevant ice types.
- Garnish zone: citrus, picks, herbs and mise en place.
- Finish zone: strainers, clean glasses and hand-off.
- Return/waste: used tools and waste away from clean areas.
Speed rack: most-used bottles first
A 6-bottle Speed Rack or larger version makes sense when the most-used bottles are within easy reach.
Its contents should follow sales data. Gin, vodka or tequila is not automatically the most important bottle in every bar.
Keep the jigger in one place

Shaker and strainer should form one workflow
If a station mainly produces shaken drinks, shakers and strainers should be arranged as one sequence. Avoid turning around or reaching across colleagues for every drink.
Use a bar mat as a defined build area
A bar mat can define the build and finish area, catch drips and simplify reset.
The ice zone cannot become a bottleneck
Ice scoops should be easy to reach but stored hygienically. Also plan where multiple ice types sit so specialist ice does not block the core supply.
Garnish close – but not in the way
A 4-compartment bar organiser can group garnishes and small components. Capacity should match peak demand: too small means constant refill, too large can increase waste.
Clean glassware needs a clear path
Clean glasses should enter the station without crossing dirty glassware and waste. Finished drinks should have a clear hand-off point to service staff.
Keep waste and returns out of the build flow
Waste should be easy to remove without occupying clean garnish or glassware zones. Used shakers, tools and glasses need a defined return route.
Mirror multiple stations
If the bar has three stations, make them as similar as practical: same jigger position, bottle order and garnish logic. This reduces mistakes and makes moving between stations easier.
Avoid overloading the station
Rare bitters, specialist liqueurs and low-use tools can live in secondary storage. Prime reach space should belong to high-frequency components.
Create a reset system
- check high-use bottles and backup,
- refill garnishes and consumables,
- return clean jiggers, shakers and strainers,
- remove waste,
- clean the work surface and mat,
- check ice and glassware.
