How to Choose a Dishwasher and Glass Racks for Glassware

The right dishwasher and glass racks for glassware should be selected as one system. A fast machine is not very useful if only a few of your core glasses fit safely in each rack, and premium stemware will not last if glasses knock into one another during washing.

1. Start with peak demand
Calculate how many glasses return during the busiest period. That is when the washing system must keep pace.

2. Which type of professional dishwasher?
The right machine depends on volume, space and the wider kitchen/bar flow. Typical categories include:
- undercounter/front-loading machine: compact and useful for moderate volume or dedicated glass washing,
- hood/pass-through machine: suited to higher throughput and clearer loading/unloading flow,
- specialist glasswasher: depending on model, designed primarily around glassware.
Always check manufacturer documentation and local requirements for water, drainage, electricity and installation before purchasing.
3. Look at real rack capacity
Cycle time alone does not tell the whole story. The relevant number is how many of your actual glasses fit safely in a rack and can therefore be washed per hour.
A wide Copa or large wine glass may require far more room than a compact water glass.
4. Rack exterior dimensions must match the machine
The glass rack must be compatible with the machine's rack size and transport system. Measure and use manufacturer-approved dimensions rather than guessing.
5. Compartment size must fit the widest point of the glass
In a divided rack, every compartment should be large enough for the glass to sit securely without being pressed against the sides or neighbouring glassware. Measure the widest point.
Compartments that are too small can cause contact and breakage; very large compartments reduce the number of glasses per cycle.
6. Height is critical for stemware
Wine, champagne and other stemmed glasses need a rack that protects the entire glass. Check both total glass height and effective internal rack height.
Some rack systems can be extended, but extensions must be compatible with the base, machine opening and glassware.
7. Open rack or divided glass rack?
Open/universal racks can be practical for robust glassware and mixed tasks. Divided glass racks give more individual protection and are often useful for stemware and more delicate shapes.

8. Check machine clearance
A tall rack holding long wine glasses must physically fit through the machine opening. Check the complete rack-and-glass combination rather than glass height alone.
9. Water quality and treatment
Water hardness and mineral content affect washing results. Professional systems may require softening, demineralisation or another treatment depending on local water and manufacturer specifications.
Follow the machine, chemical and glass manufacturers' recommendations rather than generic online temperature or dosing values.
10. Detergent and rinse aid
Incorrect dosing can create poor results, residue or unnecessary wear. Use chemicals, dosing and temperatures approved for the machine and glassware, integrated into your hygiene and service procedures.
11. Drying and handling
Plan enough space for glassware to complete the wash process and be handled safely before returning to service. A system that forces staff to take hot or wet glasses straight out of the rack is a sign that practical capacity may be too low.
12. Dirty-to-clean flow
